Fruit Tea- made with Sweet'N Low!


You are currently looking at the current favorite drink of me and my sister. 

There used to be a local restaurant here that would have a fruit tea as their tea of choice. Well, being Southern, we love tea. I think we could live off of tea. In fact, tea mixed with something is even better!
 (I know most people put lemon in their tea but try it with other citrus! Oranges and Limes make a great substitution. Yes, Limes. Trust. Me.)

I know many people are familiar something called an Arnold Palmer which is half tea and half lemonade. This is somewhat like it (lemonade vs. orange juice) but more tea instead of half and half.

You take 3/4 a cup of your tea glass, add a few Sweet'N Low (or in our house the pink stuff!), and some orange juice and you have a pretty awesome drink. This would probably be great with some pineapple juice added to it as well but we normally stick to just orange juice!

Unsweet Tea
Ice
2 Sweet'N Low packets
1/4 cup orange juice

1. Fill a glass of your choice with ice.
2. Add 2 Sweet'N Low packets over ice.
3. Pour unsweet tea over ice and Sweet'N Low. Fill up glass 3/4 of the way.
4. Add in orange juice. Stir.
5. Enjoy!

Mint-filled Brownie Cupcakes-- Secret Recipe Club








Time for another Secret Recipe Club!!

This month I had the fun blog of Cookin' with Moxie! Jamie is behind this blog and is the oldest child of huge Italian family from Long Island. She now lives in Boston but truly feels that some of the best memories comes out of the kitchen! (And I couldn't agree more!!)

It's always a hard decision on deciding what to make but this month was especially hard! It's almost football time and I really wanted to make this Loaded Baked Potato Dip but ultimately my sweet tooth won and I decided on these cupcakes. 

Just like Jamie I share of love of peppermint patties. In fact, growing up peppermint patties could always be found in my Grammie's freezer and were such a yummy treat.!

These cupcakes are actually from the Martha Stewart Cupcakes Cookbook, which is probably one of my favorite cookbooks! Instead of channeling my inner Martha though I channeled my inner Sandra Lee just because of the lack of time I have had in the kitchen lately.






Mint Filled Brownie Cupcakes
adapted from this recipe at Cookin' with Moxie

1 box of brownie mix (enough for 8 by 8 pan)
12 small peppermint patties


  1. Pre-heat oven to 350 degrees.
  2. Make brownie mix according to package directions.
  3. In a 12 cup muffin pan (or 2 six cup), grease wells with nonstick spray.
  4. Place one tablespoon of brownie mix into each muffin cup.
  5. Place unwrapped peppermint patty on top of brownie mix.
  6. Add one tablespoon of brownie mix to top peppermint patty.
  7. Place in preheated oven and bake for 25-30 minutes. (I always wait until I smell them to test to see if they are done!)
  8. Let cool for 30 minutes.
  9. Enjoy!













Menu Plan Monday


Well, hello there! Happy Monday!

Sorry for the lack of posting this month but I disappeared for some much needed family time. Roger accepted a new position with Ruth's Chris Steakhouse which unfortunately means for the next 6-8 months he will be working out of town. 

We also had Coley's Birthday party! I will try to post pictures this week of that as well! His birthday party/weekend was so much fun and definitely all about him!

Nothing really much going on.... just trying to survive the day to day happenings and taking care of Cole and enjoying Cam when I get him!

Planning a somewhat easy week of dinners!!

Monday-- Shipwreck Casserole (ground turkey, a layer of frozen corn, a layer of green beans, and then tomato sauce and cheese on top)

Tuesday-- Crescent Dogs


Thursday-- have a meeting, my mom has Cole this night

Friday-- running errands in Chattanooga, eating out

Saturday-- frozen appetizers from Trader Joe's!!!!

TCBY Giveaway



Earlier this year, I was selected as a TCBY Froyoista and as a great perk of this program I get to give away from gift certificates!

I personally love FroYo and it is a great treat on a summer day! My boys love it as well and we've enjoyed the occasional treat (especially since there is a place about a mile from our house!).

TCBY was the first FroYo I can remember having on regular basis. We used to travel a lot when I was a teenager and I always remember seeing them in random gas stations. My local one is in a gas station as well. They even have a great frozen greek yogurt even though we haven't tried it yet I'm sure it is great as well.
