Week one of Hoosier Homemade's Cupcake Challenge was to come up with a seasonal cupcake! Well, since I was making an apple cider cake anyway, I just went ahead and made a few cupcakes from the batter. I used the same caramel icing that I used on the cake. Even though the trend is to make a swirl of buttercream sometimes it's nice to have just a little frosting and just to enjoy the cake! Recipe is listed on yesterday's post.
