Apple Cider Cake with Caramel Icing

I saw this cake a few weeks ago and thought that would be so good, but what could I do to take it up a notch? I told my mom about it and she said Caramel Icing! I told my husband and he said apples so we've adapted to this Apple Cider Cake. The cake itself is not too spicy which some apple cakes can be and no nuts are included because we still want the baby to eat some too!

Apple Cider Cake
(adapted from this recipe on Eat at Home)
  • 1 box yellow cake mix (your brand of choice, I like Betty)
  • 1/3 cup vegetable oil
  • 1 1/4 cup apple cider (in place of the water)
  • 3 eggs
  • 1 tsp. cinnamon
  • 1 cup diced apples ( I had honeycrisp on hand and used those)
In the bowl of an electric mixer, combine all the ingredients for the cake except the apple.  Blend until thoroughly mixed. Gently stir in the apples until well combined throughout batter.  Pour the batter into a well greased bundt pan.  Bake at 350 degrees for about 40 minutes, or until a toothpick comes out clean.

Caramel Icing
(recipe from my Mama)

  • 1 cup brown sugar
  • 1 stick butter
  • 1 tsp. vanilla
  • 1/4 cup milk
Combine brown sugar and butter together in a saucepan and cook until sugar is dissolved. After mixture has boiled, take off of heat and slowly add vanilla and 1/4 cup milk. This icing is great because you could use it right at this point OR add confectioners sugar to get it to the thickness of your liking. I added about 2 cups to my icing. Add the icing to cooled cake.

That caramel icing sounds incredible. I love that this cake can be made using a box mix, so much easier. By the way, I'm holding a CSN giveaway on my blog and you're welcome to come by and enter. http://sweet-as-sugar-cookies.blogspot.com/2010/11/45-csn-giveaway.html
