I saw this cake a few weeks ago and thought that would be so good, but what could I do to take it up a notch? I told my mom about it and she said Caramel Icing! I told my husband and he said apples so we've adapted to this Apple Cider Cake. The cake itself is not too spicy which some apple cakes can be and no nuts are included because we still want the baby to eat some too!
Apple Cider Cake
(adapted from this recipe on Eat at Home)
- 1 box yellow cake mix (your brand of choice, I like Betty)
- 1/3 cup vegetable oil
- 1 1/4 cup apple cider (in place of the water)
- 3 eggs
- 1 tsp. cinnamon
- 1 cup diced apples ( I had honeycrisp on hand and used those)
In the bowl of an electric mixer, combine all the ingredients for the cake except the apple. Blend until thoroughly mixed. Gently stir in the apples until well combined throughout batter. Pour the batter into a well greased bundt pan. Bake at 350 degrees for about 40 minutes, or until a toothpick comes out clean.
Caramel Icing
(recipe from my Mama)
- 1 cup brown sugar
- 1 stick butter
- 1 tsp. vanilla
- 1/4 cup milk
